This creamy asparagus soup is a comforting dish that showcases the fresh flavors of the spring season, enhanced with simple ingredients and a touch of elegance with sautéed asparagus tips.

Ingredients

  • 2 bunches of asparagus (approximately 2 pounds)
  • 2 leeks, white and light green parts only, cleaned and chopped
  • 2 stalks celery, chopped
  • 1 carrot, peeled and chopped
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Asparagus tips, sautéed, for garnish
  • 4 cups water or vegetable broth

Instructions

  1. Rinse the asparagus thoroughly. Snap off the tough ends and discard them or save for making stock. Cut the spears into 1-inch pieces. Set aside the tips of a few asparagus spears for garnishing.
  2. Clean the leeks by slicing them lengthwise and rinsing any dirt trapped between the layers. Chop the leeks, celery, and carrot into small pieces.
  3. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped leeks, celery, and carrot. Sauté for about 5 minutes until the vegetables start to soften.
  4. Add the chopped asparagus pieces to the pot (except for the tips you set aside for garnish). Season with salt and pepper. Continue to cook for another 5 minutes, stirring occasionally.
  5. Pour in the 4 cups of water or vegetable broth. Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to a simmer and let cook for about 15 minutes or until all the vegetables are very tender.
  6. Remove the pot from the heat. Use an immersion blender to puree the soup until smooth. If using a standing blender, allow the soup to cool slightly before carefully blending in batches, then return it to the pot.
