  • 4 ripe tomatoes
  • 1/2 cup rice
  • 1/4 cup olives
  • 1/2 onion
  • 2 cloves garlic

Instructions

    1. Cut the tops off the tomatoes and carefully hollow them out using a spoon, removing the seeds and pulp. Set the hollowed-out tomatoes aside.
    2. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the finely chopped onion and minced garlic, and sauté until they are soft and translucent. Then, add the pulp from the hollowed-out tomatoes to the pan and cook for an additional 2-3 minutes, allowing the flavors to meld together. Add the rice and cook for another 3 minutes. Season with salt and pepper to taste.
    3. Add the cooked rice in the pan sautéed onion, garlic, and tomato pulp mixture, chopped olives, fresh mint, dill, and parsley to the bowl. Season with salt and pepper to taste, and drizzle with the remaining olive oil. Mix everything together until well combined.
    4. Finally add fresh dill, parsley and mint.
    5. Fill each hollowed-out tomato with the rice mixture, pressing it down gently to pack it in.
    6. Preheat your oven to 375°F (190°C). Arrange the stuffed tomatoes in a baking dish.
    7. Before baking, thinly slice a potato and arrange the slices around the stuffed tomatoes in the baking dish. This will add an extra layer of flavor and texture to the dish as the potatoes cook alongside the Gemista.
    8. Drizzle the tomatoes and potatoes with a little more olive oil and season with additional salt and pepper if desired. Cover the baking dish with aluminum foil and bake in the preheated oven for about 40-45 minutes, or until the tomatoes are tender and the potatoes are cooked through.
    9. Once baked, remove the foil from the baking dish and garnish the Gemista with fresh herbs. Serve hot as a main dish or alongside your favorite sides.
