Pasta with Cherry Tomatoes

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

A quick and flavorful cherry tomato basil pasta recipe that’s ready in just 15 minutes! Made with fresh cherry tomatoes, garlic, olive oil, and basil, this vegan dish is perfect for busy weeknights or light dinners.

Ingredients

  • Spaghetti: 250 g (8.8 oz)
  • Cherry tomatoes: 300 g (10.6 oz), whole
  • Garlic: 3 cloves, smashed
  • Olive oil: 3 tbsp
  • Salt: To taste
  • Pepper: To taste
  • Fresh basil: A handful of leaves
  • Chili flakes: A pinch (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve ½ cup of pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add the smashed garlic cloves and sauté for 1-2 minutes until fragrant but not browned. Add the whole cherry tomatoes and season with a pinch of salt, pepper, and chili flakes (if using). Cook for 5-7 minutes, occasionally stirring, until the cherry tomatoes soften and start to burst. Use the back of a spoon to gently press some of them to release their juices.
  3. Reduce the heat to low and add the drained spaghetti to the skillet. Toss the pasta to coat it in the tomato sauce. If needed, add a splash of the reserved pasta water to loosen the sauce.
  4. Tear the fresh basil leaves and stir them into the pasta.
  5. Divide the spaghetti into bowls and drizzle with a little extra olive oil for added richness. Optionally, garnish with extra chili flakes for a spicy kick.

Notes

  • Cook Pasta Al Dente: For the best texture, cook your spaghetti until it's slightly firm to the bite and toss immediately with the sauce.
  • Burst the Tomatoes Gently: Use the back of a spoon to press a few tomatoes while cooking for a mix of juicy sauce and intact tomatoes.
  • Reserve Pasta Water: Add a splash of reserved pasta water to the sauce to help it coat the pasta evenly and enhance the flavor.
