The Tropical Tofu Rice Bowl is a vibrant and nutritious dish that combines marinated tofu, fresh tropical fruits, and crisp vegetables, all served over a bed of fluffy rice. This bowl is packed with flavor, from the savory tofu seasoned with soy sauce and garlic to the sweet and creamy avocado and mango in the salad. Topped with pickled red onions for an extra zing, this meal is not only visually appealing but also a delightful mix of textures and tastes. Ingredients

  • For the Rice: 2 cups cooked rice (preferably jasmine or basmati for extra flavor)
  • For the Marinated Tofu: 1 cup tofu, cut into cubes, 1 tsp olive oil, 1 tsp soy sauce (or tamari for gluten-free option), 1/2 tsp garlic powder, Salt and pepper to taste
  • For the Tropical Salad: 1/2 avocado, finely chopped, 1/2 mango, finely chopped, 1/2 bell pepper, finely chopped, 6 cherry tomatoes, halved, Fresh parsley, chopped, Salt to taste, 1 tbsp olive oil, Juice of 1/2 lemon
  • Additional: 1 tbsp pickled red onions

Instructions

    1. Cook the rice according to package instructions. Fluff with a fork once done and set aside to cool slightly.
    2. In a bowl, combine the olive oil, soy sauce, garlic powder, salt, and pepper. Add the tofu cubes to the marinade and gently toss to coat evenly. Let the tofu marinate for at least 30 minutes in the refrigerator.
    3. In a large mixing bowl, combine the finely chopped avocado, mango, and bell pepper. Add the halved cherry tomatoes and chopped fresh parsley. Season with salt, drizzle with olive oil, and squeeze fresh lemon juice over the top. Gently toss all the ingredients to mix. Adjust seasoning if necessary.
    4. Heat a non-stick skillet over medium heat. Remove tofu from the marinade and add to the skillet. Cook for about 3-4 minutes on each side or until all sides are golden brown and slightly crispy.
    5. Spoon the cooked rice into bowls as the base layer. Arrange the marinated and cooked tofu on top of the rice. Add a generous amount of the tropical salad next to the tofu. Garnish with pickled red onions for an extra zing.
    6. Serve the bowl immediately while fresh and vibrant. Optionally, you can add extra lemon wedges on the side for an additional splash of citrus when served.

Notes

  • For the tofu to fully absorb the flavors of the marinade, it's best to let it marinate overnight. If time is short, aim for at least 30 minutes, but remember that the longer the tofu marinates, the more flavorful it will be.
