Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • Pinch of salt
  • 1 tbsp matcha powder
  • 1/2 cup coconut oil, melted
  • 3/4 cup coconut sugar
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1 cup vegan chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and matcha powder until well combined.
  3. In another bowl, combine the melted coconut oil, coconut sugar, almond milk, and vanilla extract. Mix until the coconut sugar is mostly dissolved and the ingredients are well incorporated.
  4. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix, as this can make the cookies tough.
  5. Fold in the vegan chocolate chips, ensuring they are evenly distributed throughout the dough.
  6. Cover the dough and chill it in the refrigerator for at least 30 minutes. This helps to firm up the dough and prevent the cookies from spreading too much during baking.
  7. Using a cookie scoop or tablespoon, scoop the dough onto the prepared baking sheet. Leave about 2 inches of space between each cookie to allow for spreading.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are slightly golden and the centers are set but still soft. The cookies will continue to firm up as they cool.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. Enjoy your delicious vegan matcha chocolate chip cookies with a glass of almond milk or your favorite beverage.

Notes

  • These cookies are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 5 days. For longer storage, freeze the cookies in a freezer-safe container for up to 3 months.
  • Chilling the dough for at least 30 minutes before baking helps the cookies maintain their shape and prevents excessive spreading. This step also allows the flavors to meld together, resulting in a more pronounced matcha and chocolate taste. For best results, you can chill the dough for up to an hour.
