  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • Pinch of salt
  • 1 tbsp matcha powder
  • 1/2 cup coconut oil, melted
  • 3/4 cup coconut sugar
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1 cup vegan chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and matcha powder until well combined.
  3. In another bowl, combine the melted coconut oil, coconut sugar, almond milk, and vanilla extract. Mix until the coconut sugar is mostly dissolved and the ingredients are well incorporated.
  4. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix, as this can make the cookies tough.
  5. Fold in the vegan chocolate chips, ensuring they are evenly distributed throughout the dough.
  6. Cover the dough and chill it in the refrigerator for at least 30 minutes. This helps to firm up the dough and prevent the cookies from spreading too much during baking.
