Ingredients

  • 2 lbs potatoes (waxy variety like Yukon Gold)
  • 1 red onion, thinly sliced
  • 1 cup radishes, thinly sliced
  • 1/2 cup pickled cucumber, diced
  • For the Dressing: 1 cup vegan mayo, 3 tablespoons vegan yogurt, 1 clove garlic, minced, juice from 1/2 lemon, Salt and pepper to taste.

Instructions

  1. Wash and boil the potatoes in a large pot of salted water until fork-tender but still firm. Be cautious not to overcook to maintain texture. Once cooked, drain and let the potatoes cool to room temperature.
