1.Finely chop one onion. 2. Heat 2 tablespoons of olive oil in a large pot over medium heat.3. Add the chopped onion and sauté for a few minutes until soft and translucent. 4. Add 3 crushed garlic cloves and cook for about 1 minute, stirring constantly.5. Pour in one large can of crushed tomatoes.6. Season with 1 teaspoon of salt and ½ teaspoon of black pepper.7. Cover the pot and let the soup simmer for about 5 minutes.8. Add 1 cup of washed and drained rice to the pot. Stir well to combine.9. Pour in about 1.5 liters of water and stir again.10. Cover the pot and let it simmer on low heat until the rice is cooked and tender, about 20–25 minutes.11. While the soup is cooking, chop some fresh parsley.12. Once the rice is cooked, turn off the heat and stir in the chopped parsley.13. Serve hot and enjoy!
