Vegan Potato Spinach Patties (Crispy & Baked)

Crispy on the outside and soft on the inside, these baked Vegan Potato Spinach Patties are a delicious, egg-free, and healthy plant-based option. Perfect as a snack or side dish!

Ingredients
  

  • 2 large Potatoes peeled, cubed, boiled, and mashed
  • 1 small Onion finely chopped
  • 2 cloves Garlic minced
  • 1 cup Fresh spinach finely chopped
  • 1 tbsp Olive oil for sautéing
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black pepper
  • 1 tbsp Olive oil for brushing the tops
  • Vegan ranch dressing optional, for serving

Method
 

  1. Step 1: Peel, cube, and boil the potatoes in salted water until tender. Drain them extremely well (to avoid excess moisture) and mash them in a large bowl.
  2. Step 2: In a pan, heat 1 tbsp olive oil over medium heat. Sauté the finely chopped onion until soft and translucent (about 3 minutes).
  3. Step 3: Add the minced garlic and finely chopped spinach. Cook for another 1-2 minutes just until the spinach wilts. Remove from heat.
  4. Step 4: Add the sautéed onion, garlic, and spinach mixture to the mashed potatoes. Season with salt and black pepper, and mix well until completely combined.
  5. Step 5: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Using your hands, shape the potato mixture into small, even patties and place them on the baking sheet.
  6. Step 6: Lightly brush the tops of the patties with 1 tbsp of olive oil. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  7. Step 7: Let the patties cool slightly on the tray to firm up, then serve warm with vegan ranch dressing!

Notes

  • Drain the potatoes well: Excess moisture is the main reason patties fall apart. Ensure they are fully drained before mashing!
  • Chop the spinach finely: This helps distribute it evenly throughout the patties and prevents large chunks that can break the patties apart.
