Ingredients

  • 3 medium Potatoes peeled and diced into uniform bite-sized cubes
  • 2 cups Green beans trimmed and cut into 1-inch pieces; fresh or frozen
  • 1 cup Canned tomatoes diced, with their juices
  • 1 medium Carrot peeled and diced
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 2 tablespoons Extra-virgin olive oil
  • 4 cups Vegetable broth or water
  • Salt and black pepper to taste
  • Fresh parsley chopped, for garnish

Method

  1. Step 1 (Prep Vegetables): Dice the peeled potatoes and carrot into uniform cubes, trim and cut the green beans into 1-inch pieces, finely chop the onion, and mince the garlic. Set aside.
  2. Step 2 (Sauté Onion & Garlic): Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook for 2–3 minutes until softened. Stir in the minced garlic and cook for another 1 minute until fragrant.
  3. Step 3 (Coat Veggies in Oil): Add the diced carrot, potatoes, and green beans to the pot. Stir well for 1–2 minutes to coat the vegetables in the aromatic olive oil.
  4. Step 4 (Add Tomatoes & Broth): Pour in the diced canned tomatoes (with their juices) and stir. Add the 4 cups of vegetable broth (or water) and bring the mixture to a boil over medium-high heat.
  5. Step 5 (Simmer Until Tender): Reduce the heat to low, cover the pot with a lid, and let the soup simmer gently for 20–25 minutes, or until the potatoes, carrots, and green beans are completely fork-tender.
  6. Step 6 (Season to Taste): Season generously with salt and black pepper to taste, adjusting as needed.
  7. Step 7 (Garnish & Serve): Ladle the hot soup into bowls and garnish with freshly chopped parsley. Serve warm with crusty bread!

Notes

  • Uniform Dicing: Dice the potatoes and carrots into similar-sized cubes (about ½ to ¾ inch) so they cook at the exact same rate.
  • Crisp-Tender Green Bean Option: Simmering the green beans for the full 20–25 minutes makes them silky and country-style tender; if you prefer bright green, crisp-tender green beans, stir them in during the final 10 minutes of cooking!
  • Season Gradually: Taste the broth at the end of simmering and season gradually with sea salt and black pepper for the best balance.
