Healing Golden Vegetable Soup

Ingredients
  

  • 4-5 whole Potatoes Notes: Peeled and diced
  • 1/2 whole Red bell pepper Notes: Chopped
  • 1/2 whole Green bell pepper Notes: Chopped
  • 1/2 whole Yellow bell pepper Notes: Chopped
  • 1 medium Carrot Notes: Sliced
  • 1 medium Zucchini Notes: Sliced
  • 1/2 whole Leek Notes: Thinly sliced
  • 1 whole Onion Notes: Chopped
  • 3 cloves Garlic Notes: Minced
  • 1 stalk Celery Notes: Chopped
  • 1 small piece Fresh turmeric Notes: Grated. Or substitute with 1/2 tsp ground turmeric
  • 2 tbsp Olive oil
  • 4 cups Vegetable broth
  • 1 pinch Salt and black pepper Notes: To taste. Black pepper is essential to activate the turmeric!
  • 2 tbsp Fresh parsley and mint Notes: Chopped, for garnish
  • 1 whole Lemon Notes: Cut into wedges for serving

Method
 

  1. Step 1: In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and leek. Sauté until they are soft and translucent, about 5 minutes.
  2. Step 2: Add the potatoes, bell peppers, carrot, zucchini, celery, and grated fresh turmeric. Stir everything together and cook for another 3-4 minutes to release the flavors.
  3. Step 3: Pour in the vegetable broth and season generously with salt and black pepper. Bring to a boil, then reduce the heat, cover, and let it simmer for 25-30 minutes until all vegetables are tender.
  4. Step 4: For a creamy texture, use an immersion blender to blend about half of the soup directly in the pot. This makes the broth rich while leaving nice vegetable chunks.
  5. Step 5: Ladle the soup into bowls. Garnish with fresh parsley, mint, and a big squeeze of fresh lemon juice right before eating. Serve warm!
