Ingredients

  • 1 cup Rolled oats use certified gluten-free oats if needed
  • 1/2 cup Walnuts raw, unsalted
  • 1 cup Grated carrots finely grated, about 2 medium carrots
  • 1/2 cup Pitted dates packed; soak in warm water for 10 mins if dry
  • 2 –3 tbsp Oat milk add 1 tbsp at a time to adjust consistency
  • 1 tsp Ground cinnamon
  • 1/2 tsp Ground ginger
  • 1/2 cup Vegan white chocolate for coating
  • 1/4 cup Vegan dark chocolate for drizzling

Method

  1. Step 1 (Pulse Oats & Walnuts): Add the oats and walnuts to a blender or food processor. Pulse until you get a coarse flour-like texture.
  2. Step 2 (Blend Carrots, Dates & Spices): Add the finely grated carrots, pitted dates, cinnamon, and ground ginger to the food processor. Blend until the mixture is well combined and sticky.
  3. Step 3 (Add Oat Milk): Gradually add the oat milk, one tablespoon at a time, and blend until the mixture holds together firmly when pressed between your fingers.
  4. Step 4 (Roll Into Balls): Scoop out small portions of the mixture and roll them into smooth balls (about 1 inch in diameter). Place them on a parchment-lined tray.
  5. Step 5 (First Chill): Place the tray in the fridge for about 30 minutes to firm up the balls before dipping.
  6. Step 6 (Melt White Chocolate): Melt the vegan white chocolate gently in a microwave (in 20-second bursts) or over a double boiler until smooth.
  7. Step 7 (Coat the Balls): Dip each chilled ball into the melted white chocolate, ensuring it is fully coated. Return the coated balls to the parchment-lined tray.
  8. Step 8 (Melt Dark Chocolate): Melt the vegan dark chocolate in the same manner as the white chocolate.
  9. Step 9 (Drizzle): Use a spoon or piping bag to drizzle the melted dark chocolate over the white chocolate-coated balls in a decorative pattern.
  10. Step 10 (Set & Serve): Place the tray back in the fridge for another 15–20 minutes to allow the chocolate to set completely. Enjoy! Store any leftovers in an airtight container in the fridge for up to 7 days.

Notes

  • Chill Before Rolling: If the dough feels soft, chill the mixture for 15–30 minutes to make it easier to handle and shape into smooth balls.
  • Soften Dry Dates: If your dates are dry, soak them in warm water for 10–15 minutes and drain well before blending so they puree smoothly.
  • Chocolate Quality: Choose high-quality vegan white and dark chocolate bars or chips for the smoothest melting and best snappy truffle finish!
