Total Time 1 hour
Course: Dessert
Cuisine: American

Ingredients

  • 1 cup Dark chocolate (chips). Use 70% dark chocolate or higher for maximum health benefits
  • 1/4 cup Creamy peanut butter. Warmed slightly in the microwave so it's easy to drizzle
  • 1/2 cup Fresh strawberries. Thinly sliced and patted dry
  • 1 small Banana. Thinly sliced
  • 1 squeeze Lemon juice. Just enough to lightly brush the banana slices so they don't brown
  • 1/4 cup Roasted peanuts. Chopped. Optional, but adds great crunch!
  • 1 pinch Flaky sea salt. To elevate the chocolate flavor

Method

  1. Step 1: Line a baking sheet with parchment paper or a silicone baking mat. Slice your strawberries and banana thinly. Lightly brush the banana slices with lemon juice.
  2. Step 2: In a microwave-safe bowl, melt the dark chocolate in 30-second intervals, stirring in between, until completely smooth.
  3. Step 3: Pour the melted chocolate onto the prepared baking sheet and spread it with a spatula into an even layer, about 1/4 inch thick.
  4. Step 4: Warm the peanut butter in the microwave for 15-20 seconds. Drizzle it over the wet chocolate in a zigzag pattern.
  5. Step 5: Evenly arrange the sliced strawberries and bananas over the chocolate and peanut butter. Sprinkle with chopped peanuts and a pinch of flaky sea salt.
  6. Step 6: Place the baking sheet in the refrigerator for 1 hour (or freezer for 30 minutes) until the chocolate is completely set and hard.
  7. Step 7: Remove from the fridge, break the bark into pieces with your hands, and enjoy immediately! Store leftovers in the fridge for up to 3 days, or in the freezer for up to 1 month.

Notes

  • Storage Tip: Because fresh fruit releases moisture, this bark is highly perishable. For a longer-lasting "viral frozen treat", store it in the freezer and let it thaw for 3 minutes before eating!
  • Make sure your fruit is sliced very thinly so the bark isn't too chunky or watery.
