How to Boil Corn on the Cob (Tender & Sweet)

Learn the simple secret for tender, juicy, and crisp boiled corn on the cob in just 3 to 5 minutes. Never overcook sweet corn or end up with tough kernels again!
Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes

Ingredients

  • 4 to 6 ears fresh sweet corn husked and silk removed
  • Water enough to fill a large stockpot ⅔ full
  • 2 tbsp vegan butter or regular butter, for serving (optional)
  • Flaky sea salt & cracked black pepper to taste (for serving)
  • Optional toppings: smoked paprika fresh lime wedges, or chopped fresh parsley

Method

  1. Prep the Corn: Husk each ear of corn and strip away the fine silk threads. Rinse briefly under cool water to remove any lingering silks.
  2. Bring Water to a Boil: Fill a large, deep pot about two-thirds full of water. Do not add salt. Cover with a lid and bring to a rapid, rolling boil over high heat.
  3. Add Corn to Pot: Using long kitchen tongs, carefully lower the husked corn cobs into the boiling water. The water will briefly stop boiling.
  4. Boil for 3–5 Minutes: Keep the heat on high. Once the water returns to a rolling boil, cover with the lid and set a timer for 3 to 5 minutes (3 minutes for tender-crisp, 5 minutes for softer kernels).
  5. Drain and Serve Immediately: Use tongs to remove the hot corn directly onto a serving platter. Do not let it sit in the hot water. Brush generously with melted butter and season with sea salt and pepper to taste.

Notes

  • Never Salt the Cooking Water: Salting the water draws moisture out and toughens the skins of the corn kernels. Always salt the cobs after they are removed from the water.
  • Avoid Overboiling: Do not boil modern sweet corn for longer than 5 minutes (and never 15–20 minutes), as excessive heat breaks down sugars and turns the kernels chewy and dull.
  • Frozen Corn on the Cob: If cooking from frozen, drop the ears straight into boiling water without thawing and boil for 5 to 8 minutes.
  • Keeping Warm: If not serving immediately, wrap the cobs in aluminum foil or place them inside an insulated food container. Avoid leaving them in the hot cooking water, which makes them soggy.
