Creamy Thai Coconut Pumpkin Soup

Ingredients
  

  • 1 medium pumpkin peeled, seeded, and diced
  • 1 can 400 ml full-fat coconut milk
  • 2 tbsp red curry paste adjust to taste
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp olive oil or coconut oil
  • Water or vegetable broth enough to cover the pumpkin
  • 1 tbsp fresh lime juice
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

Method
 

  1. Sauté Aromatics: Heat oil in a large pot over medium heat. Add chopped onion and sauté until softened, about 3-4 minutes.
  2. Bloom Spices: Add minced garlic and red curry paste, cooking for another 1-2 minutes until highly fragrant.
  3. Simmer: Add the diced pumpkin to the pot and stir to coat. Pour in enough water or vegetable broth to just cover the pumpkin. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the pumpkin is tender.
  4. Blend: Once the pumpkin is soft, use an immersion blender (or transfer to a countertop blender) and blend until completely smooth.
  5. Finish: Stir in the coconut milk, season with salt and pepper to taste, and simmer for an additional 5 minutes.
  6. Garnish: Remove from heat, stir in the fresh lime juice, ladle into bowls, and garnish with fresh cilantro!

Notes

  • Spice Level: Adjust the amount of red curry paste based on your tolerance. Start with 1 tbsp and add more gradually.
  • Texture Tip: For a silky smooth texture, blend the soup thoroughly, ensuring there are no lumps before adding the coconut milk.
  • Storage: Keeps in the fridge for up to 4 days or in the freezer for up to 3 months.
