Flaky Vegan Biscoff Swirls

Whip up these easy 4-ingredient vegan Biscoff swirls in under 30 minutes! The perfect flaky, cozy holiday dessert to add to your Christmas baking list.

Ingredients
  

  • 1 sheet vegan puff pastry thawed
  • ½ cup Biscoff spread or any vegan cookie butter
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tbsp vegan butter melted, for brushing

Method
 

  1. Prepare: Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper. Roll out the thawed puff pastry onto a lightly floured surface.
  2. Spread: Evenly spread the Biscoff cookie butter over exactly one half of the puff pastry sheet.
  3. Sprinkle: Mix the brown sugar and cinnamon together in a small bowl, then sprinkle it evenly over the Biscoff layer.
  4. Fold & Chill: Fold the blank half of the pastry over the Biscoff side to sandwich the filling. (Pro tip: Place the folded dough in the freezer for 5-10 minutes to firm up before cutting).
  5. Cut & Twist: Cut the dough into 8 even strips. Twist each strip a few times, then roll it tightly around itself to create a swirl shape.
  6. Bake: Place the swirls on the prepared baking tray. Lightly brush the tops with melted vegan butter. Bake for 15-20 minutes, or until deeply golden brown and puffy.
  7. Serve: Allow the swirls to cool slightly before serving warm. Enjoy!

Notes

  • Gluten-Free Option: Swap the pastry for a GF puff pastry, and use a GF cookie butter or almond butter (standard Biscoff contains wheat).
  • Make Ahead: Assemble the swirls the night before, keep them covered in the fridge, and bake them fresh the next morning!
