Gluten-Free Avocado Green Pasta

Ingredients
  

  • 7 oz 200g Gluten-Free Pasta (Notes: Penne or fusilli work perfectly)
  • 2 cups Fresh Spinach Notes: Tightly packed
  • 2 cups Fresh Kale Notes: Stems removed, tightly packed
  • 10 large Fresh Basil leaves Notes: Plus extra for garnish
  • 1 whole Ripe Avocado Notes: Must be very soft for a creamy sauce
  • 1 whole Lemon Notes: Juiced. Use 1/2 if you prefer less tang
  • 2 cloves Garlic Notes: Peeled
  • 1/2 tsp Salt Notes: Adjust to taste
  • 1/2 cup Pasta Water Notes: Starchy water scooped from the boiling pasta pot
  • 1/4 cup Green Olives Notes: For serving and garnish

Method
 

  1. Step 1: Boil the Pasta. Bring a large pot of salted water to a boil. Cook the gluten-free pasta according to the package instructions until al dente. Crucial step: Right before draining, scoop out 1/2 cup of the starchy pasta water and set it aside.
  2. Step 2: Blend the Sauce. While the pasta cooks, add the spinach, kale, basil, avocado, lemon juice, garlic, salt, and the warm reserved pasta water to a high-speed blender. Blend on high until completely smooth and velvety.
  3. Step 3: Toss Together. Drain the pasta and return it to the warm pot (make sure it is off the heat). Pour the vibrant green avocado sauce over the pasta and gently toss until every single noodle is perfectly coated.
  4. Step 4: Garnish and Serve. Fold in the green olives. Serve immediately while warm, topped with a few extra olives and fresh basil leaves.

Notes

Pro Tip: Do not heat the avocado sauce on the stove! Avocado can become bitter when exposed to direct heat. The warmth from the freshly boiled pasta and the hot pasta water is exactly what you need to warm the dish perfectly without ruining the flavor.
