Step 1: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until soft and translucent. Add the crushed garlic and sauté for about 1 minute until fragrant.
Step 2: Stir in the chopped celery and carrot. Cook for a few minutes until they start to soften.
Step 3: Add the diced potatoes and season with 1 teaspoon salt, ½ teaspoon black pepper, and a pinch of turmeric. Mix well to coat the vegetables.
Step 4: Pour in the 1.5 liters of vegetable broth. Add the rinsed rice and stir to combine.
Step 5: Cover with a lid and bring to a boil. Reduce the heat to low and let it simmer for 20–25 minutes, or until the vegetables are tender and the rice is cooked.
Step 6: About 5 minutes before the soup is completely done simmering, stir in the halved cherry tomatoes.
Step 7: Turn off the heat and stir in the fresh chopped parsley. Serve hot with a generous squeeze of lemon juice in each bowl for a fresh, bright flavor.
