Ingredients

  • 1 medium Sweet potato peeled and cut into 1/2-inch cubes
  • 1 medium Zucchini cut into 3/4-inch cubes
  • 2 clusters Cherry tomatoes on the vine about 1 cup
  • 1/2 cup Tri-color quinoa rinsed
  • 1 to 1 1/4 cups Water for cooking quinoa
  • 1 tbsp Extra-virgin olive oil
  • 1/4 tsp Salt plus a pinch for the quinoa water
  • 1/4 tsp Ground cumin
  • 1/4 tsp Smoked paprika
  • 1/4 tsp Garlic powder
  • A pinch of Black pepper
  • 1 ripe Avocado halved and pitted
  • 1 tbsp Vegan mayonnaise 1/2 tbsp per avocado half
  • 1 tbsp Fresh parsley finely chopped
  • 2 wedges Fresh lemon for squeezing over the bowls

Method

  1. Step 1 (Preheat & Prep Veggies): Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Peel and cube the sweet potato into 1/2-inch pieces, and cut the zucchini into 3/4-inch cubes.
  2. Step 2 (Season Veggies): Place the cubed sweet potato and zucchini in a bowl. Drizzle with the olive oil and sprinkle with the salt, ground cumin, smoked paprika, garlic powder, and black pepper. Toss well until evenly coated.
  3. Step 3 (Roast Veggies & Tomatoes): Spread the sweet potato and zucchini in a single layer on the prepared baking sheet and roast at 400°F (200°C) for 15–18 minutes. Add the cherry tomatoes on the vine to the baking sheet (or in a separate small pan) for the final 5–7 minutes of roasting until the veggies are golden and tender and the tomatoes are blistered.
  4. Step 4 (Cook the Quinoa): While the vegetables roast, combine the rinsed tri-color quinoa and water with a pinch of salt in a small saucepan. Bring to a boil, cover with a lid, reduce heat to low, and simmer for 15 minutes until the water is absorbed. Turn off the heat, let sit covered for 5 minutes, then fluff with a fork.
  5. Step 5 (Assemble the Bowls): Divide the fluffy quinoa between 2 bowls. Top with the roasted sweet potatoes, zucchini, and blistered vine tomatoes. Cut the ripe avocado in half, place one half in each bowl, and fill the seed cavity with the vegan mayonnaise.
  6. Step 6 (Garnish & Serve): Sprinkle generously with freshly chopped parsley and serve with a fresh lemon wedge to squeeze over the top!

Notes

  • Tomato Timing: Cherry tomatoes only need 5–7 minutes in a hot 400°F oven to blister and soften—adding them toward the end of the roasting time keeps them plump and juicy!
  • Even Roasting: Cut the dense sweet potato slightly smaller than the zucchini so both vegetables finish cooking at the exact same time.
  • Fluffy Quinoa Secret: Letting the cooked quinoa rest covered off the heat for 5 minutes before fluffing with a fork prevents clumping and ensures light, separate grains.
