Crafted with fresh zucchinis, potatoes, carrots, and a medley of aromatic herbs, this zucchini soup is a celebration of seasonal flavors and nourishing ingredients. Savor the harmonious blend of tender vegetables, fragrant garlic, and earthy dill, perfectly balanced with a squeeze of citrus for a touch of brightness.

Ingredients

  • 2 zucchinis
  • 2 potatoes
  • 1 carrot
  • 1 tomato
  • 1 clove garlic
  • 4 green onions
  • Fresh dill
  • Lemon or lime juice
  • Salt and pepper to taste
  • Croutons and cherry tomatoes for serving
  • 5 cups vegetable broth or water

Instructions

    1. Wash and chop the zucchinis, potatoes, carrot, tomato, and green onions into small pieces. Mince the garlic clove and finely chop the fresh dill. Set aside.
    2. In a large pot, heat a bit of olive oil over medium heat. Add the minced garlic and chopped green onions to the pot, and sauté until fragrant, about 1-2 minutes.
    3. Add the chopped zucchinis, potatoes, carrot, and tomato to the pot. Stir well to combine with the aromatics, and sauté for another 3-4 minutes until the vegetables start to soften slightly.
    4. Add 5 cups of vegetable broth or water to the pot, ensuring that the vegetables are fully covered. Bring the mixture to a gentle boil over medium-high heat.
    5. Once boiling, reduce the heat to low and let the soup simmer uncovered for about 15-20 minutes, or until the vegetables are tender and cooked through.
    6. Using an immersion blender, carefully puree the soup until smooth and creamy directly in the pot. Alternatively, allow the soup to cool slightly and transfer it in batches to a blender or food processor to blend until smooth.
    7. Season the soup with salt, pepper, and a squeeze of lemon or lime juice to taste. Stir in the chopped fresh dill for added flavor.
