This refreshing and creamy pea and mint soup is packed with vibrant flavors and comes together in under 30 minutes. Perfect for a light lunch or a starter, this soup is both nutritious and delicious!

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 4 cups (600g) frozen peas
  • 4 cups (1L) vegetable broth or water
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • ½ cup fresh mint leaves (plus extra for garnish)

Instructions
