Enjoy a delicious summer meal with our vegan stuffed peppers recipe! Filled with fresh zucchini, carrot, and basmati rice, these peppers are flavorful and easy to prepare. Perfect for a healthy and vibrant dinner.

Ingredients

  • 4 green bell peppers
  • 1 zucchini, grated
  • 1 carrot, grated
  • 1 red onion, finely chopped
  • 1 tablespoon garlic, minced
  • 1 cup basmati rice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • A pinch of black pepper
  • 4 cups of water (3 cups for cooking the rice, 1 cup for baking)

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the green bell peppers and remove the seeds and membranes. Set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant. Stir in the grated zucchini and carrot, cooking for about 5 minutes until they start to soften.
  4. Add the basmati rice, 1 teaspoon of salt, and a pinch of black pepper. Stir well to combine. Pour in 3 cups of water, bring to a boil, then reduce the heat to low. Cover and let it simmer until the rice is cooked and the water is absorbed, about 15-20 minutes. Remove from heat and let it cool slightly.
  5. Fill each green pepper with the rice and vegetable mixture. Place the stuffed peppers upright in a baking dish. Spread the remaining rice and vegetable mixture around the base of the peppers in the dish.
  6. Pour the remaining 1 cup of water into the baking dish. Drizzle the remaining 1 tablespoon of olive oil over the peppers and the rice mixture in the dish. Sprinkle a little extra salt over the peppers and rice mixture.
  7. Cover the baking dish with aluminum foil. Bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and slightly browned on top.
  8. Remove from the oven and let cool for a few minutes before serving. Enjoy your stuffed peppers hot!
